Ingredients
  

  • 3 ripe bananas 1 1/2 cups mashed
  • 1 cups cottage cheese
  • 2 large eggs
  • cup melted unsalted butter or neutral oil
  • 1 tsp vanilla extract
  • 1 ¾ cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg optional
  • ¼ tsp fine sea salt
  • ½ cups chopped nuts optional
  • ½ cups chocolate chips optional
  • ¼ cups dried fruit optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Mash bananas until smooth.
  • Mix wet ingredients: cottage cheese, eggs, butter, and vanilla extract.
  • Combine dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Mix wet and dry ingredients until just combined.
  • Fold in optional mix-ins like nuts or chocolate chips.
  • Pour batter into pan and bake for 50-60 minutes.
  • Cool, slice, and enjoy!
