Ingredients
  

  • 3 cups cooked shredded chicken rotisserie chicken works great
  • 1 package cream cheese 8 oz, softened
  • 1 cup sour cream
  • 1 can cream of chicken soup 10.5 oz
  • 1 ½ cups shredded cheddar cheese sharp cheddar recommended
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 1 sleeve Ritz crackers crushed
  • ¼ cup butter melted
  • crumbled bacon optional, for smoky flavor
  • chopped green onions optional, for freshness
  • diced jalapeños optional, for heat

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.
  • In a large bowl, stir together the cream cheese, sour cream, cream of chicken soup, garlic powder, salt, and pepper until smooth and well combined.
  • Fold in the shredded chicken and shredded cheddar cheese. Mix until evenly coated.
  • Pour the chicken mixture into the greased baking dish and spread it out evenly.
  • In a small bowl, combine the crushed Ritz crackers with the melted butter. Stir until crumbs are well coated.
  • Sprinkle the buttery cracker mixture evenly over the top of the casserole.
  • Bake uncovered for 30–35 minutes, until the topping is golden brown and the casserole is bubbling around the edges.
  • Let cool for a few minutes before serving.

Notes

Add crumbled bacon, green onions, or jalapeños to customize the flavor. Great for meal prep—leftovers keep well in the fridge for up to 3 days. Reheat covered in the oven or microwave.
