Ingredients

  • 3 cups Rice Krispies cereal classic crispy base
  • 1/2 cup protein powder vanilla, chocolate, or berry flavor
  • 1/2 cup natural nut butter peanut, almond, or sunflower seed butter
  • 1/3 cup honey or agave syrup
  • 2 tablespoons coconut oil
  • 1/4 cup mini sprinkles or melted chocolate optional; choose one for topping or drizzle

Instructions

  • In a large mixing bowl, combine Rice Krispies cereal and protein powder.
  • In a small saucepan over low heat, melt the nut butter, honey (or agave), and coconut oil. Stir until smooth and fully combined.
  • Pour the warm mixture over the cereal and protein powder. Stir well until everything is evenly coated.
  • Press the mixture firmly into a lined 8x8-inch pan. Use a spatula or parchment paper to smooth the top.
  • If using sprinkles, gently press them on top before chilling. If using melted chocolate, drizzle over the bars after chilling and before serving.
  • Refrigerate for at least 1 hour, or until firm enough to slice into bars.
  • Store in an airtight container in the refrigerator for up to 1 week.

Notes

Choose either festive sprinkles or a drizzle of chocolate for a fun and tasty finishing touch. To keep it vegan, use agave syrup and plant-based protein powder. Let sit at room temp for a few minutes before enjoying for the best texture.
